Fun fact about me: I have been gluten free for the past 17 years. I’m grateful for all the options that exist now, unlike 17 years ago, especially the attention given to gluten free eating through lifestyle diets like Paleo. When I started learning more about Paleo, it was very appealing to me! With all the amazing resources available, and with a few tweaks, simple indulgences can still be enjoyed!
One such indulgence is this delicious hazelnut coffee creamer from my friend, Kelly Brozyna! It is dairy-free, guilt-free, and made with real ingredients. This creamer is perfect for the holidays, but I’ll be using it all year long. We are coffee lovers in the McKeehan household! I was thrilled to receive a copy of her brand new cookbook, Easy Paleo Meals, and this recipe is just one of 150 inside its pages.
Hazelnut Coffee Creamer from Easy Paleo Meals by Kelly Brozyna
Makes: 2 1/2 cups – Wait time: overnight – Prep time: 10 minutes
You will need:
8 ounces (1 3/4 cups blanched hazelnuts)
2 1/2 cups water, plus more for soaking the nuts
2 soft Medjool dates, pitted
Pinch of fine sea salt
Directions:
1. Soak the hazelnuts in the refrigerator overnight in enough water to cover, plus 2 inches.
2. Drain the nuts and rinse thoroughly. Place the nuts, 2 1/2 cups of water, dates, and salt in a high-powered blender and puree until completely smooth.
3. Place a large piece of cheesecloth or a nut milk bag in a 4-cup glass measuring cup with a spout. Pour the puree through the cheesecloth or into the bag, then lift the cloth or bag, twist, and squeeze the creamer into the cup.
4. Transfer the creamer to a glass container and store in the refrigerator for up to a week.
Tip from Kelly: Since this creamer lasts for only about a week in the fridge, I like to freeze half in an 8-ounce glass jar in case I don’t use it fast enough. If you freeze some, make sure to leave a couple of inches at the top of the jar for expansion.
